Info on this bottle:Second bottling of the wheated bourbon
Nose:Caramel and vanilla with some oak wood. Fine leather and tobacco with a hint of butter and pecans.
Taste:Rich caramel and pecans - pralines with a bit of very ripe apple and spices - cloves and cinnimon with a hint of nutmeg. Very nice in the mouth with very little burn - the lower proof took away the need to add water to get rid of the burn. It is oily in a good way, coating the mouth with sweetness at first, but allowing a really enhanced finish.
Finish:Long and lingering with a sweet caramel finish turning slightly spicey and warm with an oak dryness that lingers for a good ten minutes.
Overall:Parker picked it. That should say it all because Parker knows good bourbon. I really like this bourbon. I think the second bottling at a slightly lower proof is better than the first bottling that needed a little water.

Nose:Dark and deep caramel/chocolate. Organic loam, that, were this not our nose, would crumble aromatically in our hand. Rich in nuts (smokey almonds) and fine leather. Very Buttery (laced with allspice). As rich a nose as I recall, kaleidoscopic in its ability to change aromatic colors.
Taste:Every bit as thickly rich as the nose foretold. Pecan pie, as Mike Veach noted, and flavors in abundance. Not just caramel, but thick, syrupy caramel. Again, as Mike says, it needs a bit of water to soften the attack and open the flavor floodgates. Astounding! Wheat or Rye?.........who cares when you hit this level of quality! Even the folks at the liquor store were raving about this bourbon.
Finish:Great balance 'twixt the rich sweetness and multiple earthy/organo flavors, the refreshing spice, and the dryness......each singing its heart out as if performing for God himself! (no blasphemy intended).
Overall:Miss this one and call yourself a true bourbon lover.............cannot happen! Parker Beam knows what he is about, who he is, and why he is on this earth. A bourbon like this cannot come from the hands of anything but a master. That he has done it 4 times now is remarkable. Parker's Heritage Collection bourbon releases, properly appreciated (which I do not claim for myself..........yet) will lead to a PhD in Bourbon Sipping!

Info on this bottle:barrel proof, un-chill filtered
Nose:Vanilla and caramel and a hint of chocolate. Fine leather, oak wood and pecans. A few drops of water brings out a butter pecan aroma and some apple fruit.
Taste:Brown sugar caramel pecan pie with a hint of apples. It is a bit hot at bottle proof but a few drops of water really opens it up and tones down the burn. It is still very rich caramel pecan pie and fruit with a nice thick mouth feel making it almost chewey.
Finish:Parker must love a good finish because all of his Heritage Collection bottle excell on the finish. This is the case with this bourbon. It is very pleasantly sweet with caramel mutating into a slightly dry finish with oak tannins in a great balance. You can taste the oak tannin, but they do not over power the sweetness and become bitter.
Overall:This is another winner from Parker Beam and Heaven Hill. It needs a little water to tone down the alcohol, but the water does not make it thin or watery. A great bourbon
